Description

A hearty and nutritious lentil soup packed with protein, fresh vegetables, and aromatic spices.


Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  2. Add carrots and cook for another 5 minutes.
  3. Stir in lentils, vegetable broth, and cumin. Bring to a boil.
  4. Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender.
  5. Stir in fresh spinach and let it wilt.
  6. Season with salt and pepper to taste. Serve warm.

Avoid overcooking the lentils to maintain their texture. Adjust seasoning as needed.
