Description

A nutritious and creamy tomato soup packed with protein from cottage cheese, perfect for a cozy meal.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, diced
  • ½ teaspoon kosher salt
  • 2 tablespoons minced garlic
  • 1 tablespoon tomato paste
  • 2 teaspoons dried basil
  • 1 tablespoon sugar
  • 2 cans of canned whole tomatoes (28 oz each)
  • 3 cups low sodium vegetable broth
  • 1½ cups cottage cheese (2% MF)
  • Pepper, to taste
  • Parmesan, for optional garnish
  • Basil, for optional garnish

Instructions

  1. Pour the olive oil into a large pot over medium heat.
  2. Add the diced onions and cook for about 4 to 5 minutes, or until they soften.
  3. Add the minced garlic and let it cook for an additional minute. Sprinkle in the kosher salt and stir.
  4. If the pot is getting too dry, deglaze with a splash of vegetable broth.
  5. Mix in the tomato paste and allow it to cook for one minute to enhance its flavor.
  6. Stir in the sugar and dried basil, mixing everything together well.
  7. Add the canned tomatoes with all their liquid, along with the vegetable broth. Cover and let it simmer for 20 minutes, stirring occasionally. Taste and adjust salt if necessary.
  8. Carefully transfer the soup to a blender and add the cottage cheese. Blend until it reaches a smooth consistency. Be cautious with hot liquids.
  9. Serve the soup hot, garnished with parmesan, fresh basil, and a dash of pepper.
