- 1 tablespoon olive oil
- 1 onion, diced
- ½ teaspoon kosher salt
- 2 tablespoons minced garlic
- 1 tablespoon tomato paste
- 2 teaspoons dried basil
- 1 tablespoon sugar
- 2 cans of canned whole tomatoes (28 oz each)
- 3 cups low sodium vegetable broth
- 1½ cups cottage cheese (2% MF)
- Pepper, to taste
- Parmesan, for optional garnish
- Basil, for optional garnish
Instructions
- Pour the olive oil into a large pot over medium heat.
- Add the diced onions and cook for about 4 to 5 minutes, or until they soften.
- Add the minced garlic and let it cook for an additional minute. Sprinkle in the kosher salt and stir.
- If the pot is getting too dry, deglaze with a splash of vegetable broth.
- Mix in the tomato paste and allow it to cook for one minute to enhance its flavor.
- Stir in the sugar and dried basil, mixing everything together well.
- Add the canned tomatoes with all their liquid, along with the vegetable broth. Cover and let it simmer for 20 minutes, stirring occasionally. Taste and adjust salt if necessary.
- Carefully transfer the soup to a blender and add the cottage cheese. Blend until it reaches a smooth consistency. Be cautious with hot liquids.
- Serve the soup hot, garnished with parmesan, fresh basil, and a dash of pepper.
