Description
A delicious and nutritious soup packed with lean protein from chicken and fiber from chickpeas and kale.
Ingredients

- 1 lb chicken breast, diced
- 1 can chickpeas, drained and rinsed
- 4 cups kale, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp turmeric
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Add diced chicken, cooking until browned.
- Stir in chickpeas, turmeric, cumin, salt, and pepper.
- Pour in the chicken broth and bring to a simmer.
- Add kale and cook for an additional 5-7 minutes until kale is tender.
- Taste and adjust seasoning if needed.
- Serve hot.
Notes
Pairs well with whole grain bread or a fresh salad. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
