Description

A delicious and nutritious soup packed with lean protein from chicken and fiber from chickpeas and kale.


Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 can chickpeas, drained and rinsed
  • 4 cups kale, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp turmeric
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add diced chicken, cooking until browned.
  4. Stir in chickpeas, turmeric, cumin, salt, and pepper.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add kale and cook for an additional 5-7 minutes until kale is tender.
  7. Taste and adjust seasoning if needed.
  8. Serve hot.

Notes

Pairs well with whole grain bread or a fresh salad. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
