Description

A nutritious blend of chicken and rice with a sweet and tangy honey BBQ glaze, perfect for meal prep or a healthy dinner.


Ingredients

  • 600 g Chicken breast, boneless and skinless, diced into 1-inch cubes
  • 2 cups Long grain white rice, uncooked
  • 3.5 cups Chicken broth, low sodium
  • 1/2 cup Low-sugar barbecue sauce
  • 2 tablespoons Honey
  • 1 tablespoon Low-sodium soy sauce
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Smoked paprika
  • Salt and cracked black pepper to taste

Instructions

  1. Rinse rice under cold water until the water runs clear.
  2. Combine rice and chicken broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes.
  3. Season the diced chicken breast evenly with garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Heat olive oil in a large non-stick skillet over medium-high heat.
  5. Add the chicken in a single layer and sear for 6-8 minutes, stirring occasionally, until the internal temperature reaches 165°F (74°C).
  6. Whisk together the barbecue sauce, honey, and soy sauce in a small bowl until fully combined.
  7. Reduce the skillet heat to medium-low. Pour the sauce mixture over the cooked chicken.
  8. Toss the chicken continuously for 2-3 minutes until the sauce reduces into a thick, sticky glaze that coats the meat.
  9. Remove rice from heat and fluff with a fork.
  10. Divide the rice and honey BBQ chicken into four equal portions for serving.
