- 1.5 lbs Yukon Gold potatoes, cut into 1/2-inch cubes
- 1 tablespoon olive oil
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 cup low-sodium beef broth
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat the olive oil in a large non-stick skillet over medium-high heat. Add the cubed potatoes to the skillet in a single layer. Cook for 10-12 minutes, tossing occasionally, until the edges are golden brown and the centers are fork-tender. Remove the potatoes from the pan and set them aside.
- Add the lean ground beef and diced onion to the same skillet. Cook for 6-8 minutes, breaking the meat into small crumbles with a spatula, until the beef is fully browned and the onions are translucent.
- Next, add the minced garlic, salt, black pepper, smoked paprika, and dried oregano. Stir and cook for 60 seconds until fragrant.
- Pour in the beef broth to deglaze the pan, scraping the bottom to incorporate any browned bits. Return the cooked potatoes to the skillet and toss thoroughly to combine with the beef mixture.
- Reduce heat to medium-low and simmer for 3-5 minutes until the liquid has reduced and the potatoes are well-coated. Garnish with fresh parsley and serve immediately.
