Description

Delicious and nutritious high protein egg bites, perfect for a quick breakfast or snack.


Ingredients

  • 6 large eggs
  • 1 cup low-fat cottage cheese
  • 1/2 cup liquid egg whites
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit and grease a 12-cup silicone muffin tin.
  2. Combine the eggs, cottage cheese, egg whites, salt, and pepper in a blender.
  3. Blend on high speed for 30 seconds until everything is completely smooth and aerated.
  4. Stir in the shredded cheese by hand to distribute evenly throughout the mixture.
  5. Divide the egg mixture evenly among the 12 muffin cups.
  6. Place a baking pan filled with 1 inch of hot water on the bottom oven rack to create a steam bath.
  7. Bake the egg bites on the middle rack for 25 minutes until the centers are just set.
  8. Remove from the oven and allow to cool in the tin for 5 minutes before removing.

Notes

These egg bites can be stored in an airtight container in the fridge for up to one week or frozen for longer storage.
