Ingredients

- 6 large eggs
- 1 cup low-fat cottage cheese
- 1/2 cup liquid egg whites
- 1/2 cup shredded sharp cheddar cheese
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your oven to 300 degrees Fahrenheit and grease a 12-cup silicone muffin tin.
- Combine the eggs, cottage cheese, egg whites, salt, and pepper in a blender.
- Blend on high speed for 30 seconds until everything is completely smooth and aerated.
- Stir in the shredded cheese by hand to distribute evenly throughout the mixture.
- Divide the egg mixture evenly among the 12 muffin cups.
- Place a baking pan filled with 1 inch of hot water on the bottom oven rack to create a steam bath.
- Bake the egg bites on the middle rack for 25 minutes until the centers are just set.
- Remove from the oven and allow to cool in the tin for 5 minutes before removing.
Notes
These egg bites can be stored in an airtight container in the fridge for up to one week or frozen for longer storage.
