Description

A delicious and satisfying creamy beef pasta packed with protein from lean ground beef and Greek yogurt.


Ingredients

  • 8 oz penne pasta
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil (for cooking)

Instructions

  1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat a bit of olive oil over medium heat. Sauté the chopped onion and minced garlic until fragrant and the onion is translucent.
  3. Add the ground beef and cook until browned, breaking it into smaller pieces.
  4. Stir in the diced tomatoes with their juices, beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Let simmer for a few minutes.
  5. Add the cooked penne to the skillet, tossing everything together until well combined and heated through.
  6. Serve in bowls, garnished with fresh basil or parsley.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat with a splash of beef broth or water if needed.
