A delicious and satisfying creamy beef pasta packed with protein from lean ground beef and Greek yogurt.

- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Olive oil (for cooking)
Instructions
- Cook the penne pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat a bit of olive oil over medium heat. Sauté the chopped onion and minced garlic until fragrant and the onion is translucent.
- Add the ground beef and cook until browned, breaking it into smaller pieces.
- Stir in the diced tomatoes with their juices, beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Let simmer for a few minutes.
- Add the cooked penne to the skillet, tossing everything together until well combined and heated through.
- Serve in bowls, garnished with fresh basil or parsley.
Notes
Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat with a splash of beef broth or water if needed.
