  • 1 medium onion, chopped

  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil (for cooking)

Instructions

  1. Begin by boiling water in a pot. Add the penne pasta and cook it according to the package instructions. Once done, drain the pasta and set it aside.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until fragrant and the onion is translucent.
  3. Add the lean ground beef to the skillet. Cook until browned and crumbles easily, stirring occasionally for even cooking.
  4. Stir in the diced tomatoes (with juices) and beef broth. Add the Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well and let it simmer for a few minutes until heated through.
