Ingredients

  • 2 cups all-purpose flour
  • 1 cup cottage cheese
  • ½ cup unsalted butter, softened
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup milk
  • 2 tablespoons milk or melted butter (for topping)
  • 1 tablespoon extra butter (for brushing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour, cottage cheese, softened butter, honey or maple syrup, baking powder, salt, and black pepper. Mix well.
  3. Gradually add the milk to the mixture and stir until a dough forms.
  4. Turn the dough out onto a floured surface and knead gently for a minute until smooth.
  5. Roll out the dough to about 1-inch thick and cut out shapes using a biscuit cutter or glass.
  6. Place the biscuits on a baking sheet lined with parchment paper.
  7. Brush the tops with either milk or melted butter for a golden finish.
  8. Bake for 15-20 minutes or until golden brown.
  9. Remove from oven and brush with extra melted butter. Serve warm.

Notes

For best results, don’t over-knead the dough and ensure to measure flour correctly.
