Description

This Chicken Ranch Quesadilla is a cheesy, flavorful meal packed with protein, perfect for lunch, dinner, or a quick snack.


Ingredients

  • 2 cups Cooked Chicken Breast
  • 1 cup Shredded Cheese (Cheddar or Mozzarella)
  • 1/2 cup Ranch Dressing
  • 1/4 cup Diced Green Onions
  • 1 medium Diced Bell Pepper
  • 1/2 teaspoon Black Pepper
  • 4 pieces Flour Tortillas
  • 1 tablespoon Olive Oil

Instructions

  1. Prepare the ingredients: Shred the cooked chicken breast, dice the bell pepper, and chop the green onions.
  2. Combine the filling: In a large bowl, mix the shredded chicken, ranch dressing, diced bell pepper, diced green onions, and black pepper. Stir until well combined.
  3. Heat the tortillas: In a large skillet, heat olive oil over medium heat. Once hot, place one flour tortilla in the pan.
  4. Add the filling: Spoon half of the chicken mixture onto half of the tortilla, then sprinkle a generous amount of shredded cheese on top before folding the tortilla in half.
  5. Cook the quesadilla: Cook for about 3-4 minutes on one side until golden brown, then carefully flip and cook the other side for another 3-4 minutes until the cheese is melted and the tortilla is crispy.
  6. Repeat the process: Remove the cooked quesadilla and keep warm. Repeat with remaining tortillas and filling.
  7. Serve and enjoy: Cut each quesadilla into wedges and serve warm with extra ranch dressing or salsa, if desired.

Notes

Don’t overfill your quesadillas to prevent them from breaking. Use medium heat for even cooking.
