Description

A delicious and healthy high-protein chicken fajita rice bowl featuring chicken breast, colorful bell peppers, and brown rice.


Ingredients

  • 1 lb chicken breast
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 cup brown rice
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning
  • Salt and pepper to taste
  • Lime wedges (for garnish)
  • Cilantro (optional for garnish)

Instructions

  1. Cook brown rice according to package instructions.
  2. Heat olive oil in a skillet over medium heat.
  3. Season chicken breast with fajita seasoning, salt, and pepper.
  4. Add chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
  5. Remove chicken from the skillet and set aside.
  6. Add sliced bell peppers to the skillet and sauté until tender, about 5 minutes.
  7. Slice the cooked chicken and return it to the skillet with the bell peppers, mixing well.
  8. Serve the chicken and pepper mixture over brown rice.
  9. Garnish with lime wedges and cilantro if desired.

Notes

For added flavor, experiment with different fajita seasonings or try adding jalapeños for a spicy kick.
