Description

Delicious enchiladas packed with protein, featuring shredded chicken and a creamy sauce.


Ingredients

  • 2 cups shredded cooked chicken
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the shredded chicken with taco seasoning, salt, and pepper in a bowl.
  3. Combine the cream of chicken soup, sour cream, and chicken broth in another bowl to make the creamy sauce.
  4. Spread a small amount of the sauce on the bottom of a baking dish.
  5. Place a portion of the chicken mixture into each tortilla, sprinkle with cheese, roll up, and place seam side down in the baking dish.
  6. Pour the remaining sauce over the enchiladas and top with the remaining cheese.
  7. Bake for 25-30 minutes or until heated through and cheese is bubbly.
  8. Garnish with chopped green onions before serving.
