Description
Delicious and healthy brownie cups made with black beans and nut butter, packed with protein and fiber.
Ingredients

- 1 cup black beans, drained and rinsed
- 2 large eggs
- 1/2 cup peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- A pinch of salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake tray with paper liners or spray it with non-stick cooking spray.
- Blend the black beans in a food processor until smooth, about 1-2 minutes.
- Add the eggs, peanut butter, honey (or maple syrup), cocoa powder, vanilla extract, baking powder, and salt to the food processor. Blend until mixed well and smooth.
- Fold in the chocolate chips if using.
- Divide the batter among the cupcake liners, filling them about 3/4 full.
- Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
These brownie cups are gluten-free and an excellent source of protein and fiber. They can be stored at room temperature for up to 3 days or refrigerated for about a week.
