Description

Delicious and healthy brownie cups made with black beans and nut butter, packed with protein and fiber.


Ingredients

Scale
  • 1 cup black beans, drained and rinsed
  • 2 large eggs
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tray with paper liners or spray it with non-stick cooking spray.
  2. Blend the black beans in a food processor until smooth, about 1-2 minutes.
  3. Add the eggs, peanut butter, honey (or maple syrup), cocoa powder, vanilla extract, baking powder, and salt to the food processor. Blend until mixed well and smooth.
  4. Fold in the chocolate chips if using.
  5. Divide the batter among the cupcake liners, filling them about 3/4 full.
  6. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

These brownie cups are gluten-free and an excellent source of protein and fiber. They can be stored at room temperature for up to 3 days or refrigerated for about a week.
