Description

Delicious cookies that combine the nostalgia of traditional Pop Tarts with a healthier twist, featuring almond flour and protein powder for a chewy texture.


Ingredients

  • 1 cup almond flour
  • 1/2 cup oats
  • 1/4 cup brown sugar
  • 1/2 cup protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup apple filling or jam for filling
  • 1/4 cup powdered sugar for glaze (optional)
  • 1 tablespoon milk for glaze (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together the almond flour, oats, brown sugar, protein powder, baking powder, and salt in a large bowl.
  3. Combine the melted coconut oil, egg, and vanilla extract in a separate bowl.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Divide the dough into two equal parts. Roll out one part into a rectangle on a floured surface.
  6. Spread the apple filling or jam in the center of the rectangle, leaving some space around the edges.
  7. Roll out the second part of the dough and place it on top of the filling.
  8. Cut to fit and seal the edges using a fork.
  9. Bake in the preheated oven for 15-20 minutes until golden brown.
  10. Optional: mix powdered sugar with milk to create a glaze; drizzle on top after cooling.
