Description

Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon baking powder
  • 1/2 cup blueberries
  • 1 tablespoon sweetener (optional)
  • A pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks in a bowl.
  3. Beat the egg whites and cream of tartar until stiff peaks form.
  4. Mix egg yolks, cottage cheese, baking powder, salt, and sweetener until well combined in another bowl.
  5. Fold the egg whites into the egg yolk mixture until just combined.
  6. Carefully fold in the blueberries.
  7. Spoon the mixture onto the prepared baking sheet in rounds.
  8. Bake for 20-25 minutes or until golden and set.
  9. Allow to cool slightly before serving.
