A delicious high protein blueberry cloud bread that’s easy to make and packed with nutrients.
Ingredients

- 4 large eggs
- 1 cup cottage cheese
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon baking powder
- 1/2 cup blueberries
- 1 tablespoon sweetener (optional)
- A pinch of salt
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the egg whites from the yolks in a bowl.
- Beat the egg whites and cream of tartar until stiff peaks form.
- Mix egg yolks, cottage cheese, baking powder, salt, and sweetener in another bowl until well combined.
- Fold the egg whites into the egg yolk mixture until just combined.
- Carefully fold in the blueberries.
- Spoon the mixture onto the prepared baking sheet in rounds.
- Bake for 20-25 minutes or until golden and set.
- Allow to cool slightly before serving. Enjoy your fluffy, protein-packed blueberry cloud bread!
Notes
Store leftovers in an airtight container in the refrigerator for 3-5 days. For longer storage, freeze wrapped in foil or plastic wrap.
