Description

A nutritious and satisfying high protein dish made with black beans, rice, and turkey sausage.


Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup rice (white or brown)
  • 2 turkey sausages, sliced
  • 1 green bell pepper, diced
  • 2 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the sliced turkey sausage and cook until browned.
  4. Stir in the diced green bell pepper, black beans, rice, and broth.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes, or until the rice is cooked.
  6. Season with salt and pepper to taste.
  7. Serve warm, and enjoy your nutritious meal.

Notes

For a vegan option, substitute the turkey sausage with plant-based sausage or skip it altogether.
