Ingredients

- 1 cup black beans, rinsed and drained
- 1 cup rice (white or brown)
- 2 turkey sausages, sliced
- 1 green bell pepper, diced
- 2 cups chicken or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the sliced turkey sausage and cook until browned.
- Stir in the diced green bell pepper, black beans, rice, and broth.
- Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes, or until the rice is cooked.
- Season with salt and pepper to taste.
- Serve warm, and enjoy your nutritious meal.
Notes
For a vegan option, substitute the turkey sausage with plant-based sausage or skip it altogether.
