- 1 cup chopped almonds
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract

- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the rolled oats, chopped almonds, pumpkin seeds, sunflower seeds, salt, and cinnamon.
- In another bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and mix until everything is well coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake for about 20-25 minutes, stirring halfway through, until golden brown.
- Let the granola cool completely before storing it in an airtight container.
