- 1 lb Sausage (Italian, chicken, or plant-based)
- 2 large Sweet Potatoes (peeled and cubed)
- 1/4 cup Honey (or maple syrup for a vegan option)
- 3 cloves Garlic (minced)
- 2 tablespoons Soy Sauce (or tamari for gluten-free)
- 1 teaspoon Paprika (smoked paprika recommended)
- Salt, to taste
- Pepper, to taste
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley (chopped)
Instructions
- Peel and cube the sweet potatoes for even cooking.
- If using sausage links, slice into bite-sized pieces.
- Heat olive oil in a skillet over medium heat and add sweet potatoes. Season with salt, pepper, and paprika.
- Cook for 15–20 minutes until sweet potatoes are fork-tender and golden brown, stirring occasionally.
- Push sweet potatoes to the side of the skillet and add sausage, cooking for an additional 5–7 minutes until browned.
- In a small bowl, mix honey, minced garlic, and soy sauce. Pour over sweet potatoes and sausage, tossing to coat.
- Cook together for 2–3 minutes to meld flavors. Stir in chopped parsley just before serving.
- Serve and enjoy!
