Ingredients

  • 1 lb Sausage (Italian, chicken, or plant-based)
  • 2 large Sweet Potatoes (peeled and cubed)
  • 1/4 cup Honey (or maple syrup for a vegan option)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce (or tamari for gluten-free)
  • 1 teaspoon Paprika (smoked paprika recommended)
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley (chopped)

Instructions

  1. Peel and cube the sweet potatoes for even cooking.
  2. If using sausage links, slice into bite-sized pieces.
  3. Heat olive oil in a skillet over medium heat and add sweet potatoes. Season with salt, pepper, and paprika.
  4. Cook for 15–20 minutes until sweet potatoes are fork-tender and golden brown, stirring occasionally.
  5. Push sweet potatoes to the side of the skillet and add sausage, cooking for an additional 5–7 minutes until browned.
  6. In a small bowl, mix honey, minced garlic, and soy sauce. Pour over sweet potatoes and sausage, tossing to coat.
  7. Cook together for 2–3 minutes to meld flavors. Stir in chopped parsley just before serving.
  8. Serve and enjoy!
