Description
Delightful and crispy pineapple fritters that bring tropical joy to your taste buds.
Ingredients
Scale
- 1 fresh pineapple (peeled and cored)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup coconut milk (or regular milk)
- 1 teaspoon vanilla extract
- Oil for frying (vegetable or coconut oil)
- Powdered sugar (for dusting)
- Optional: fresh mint leaves for garnish
Instructions
- Prepare the pineapple: Cut the pineapple into thick rings or bite-sized pieces, depending on your preference. Set them aside.
- Make the batter: In a large mixing bowl, combine the flour, cornstarch, sugar, baking powder, and salt. Mix well. Gradually add coconut milk and vanilla extract to the dry ingredients. Stir until you have a smooth batter.
- Heat the oil: In a deep frying pan or pot, heat oil over medium heat. The oil should be about 2 inches deep.
- Fry the pineapple: Dip each pineapple piece into the batter, making sure to coat it well. Carefully place the battered pineapple into the hot oil. Fry for about 2-3 minutes on each side or until golden brown.
- Drain excess oil: Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to absorb excess oil.
- Serve: Dust the fritters with powdered sugar and add fresh mint leaves for a beautiful presentation. Serve warm to enjoy the tropical flavors!
