- 1 pound carrots, peeled and sliced
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sliced carrots with olive oil, maple syrup, Dijon mustard, salt, and pepper.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, flipping them halfway through.
- Serve warm.
