- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1/2 cup diced onions
- 1/4 cup ketchup
- 1 egg
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/4 cup butter
- 1/4 cup milk (for mashed potatoes)
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, diced onions, ketchup, egg, salt, and pepper. Mix until well-blended.
- Shape the meat mixture into a loaf and place it in a lightly greased baking dish.
- Bake for about 1 hour, until the meatloaf reaches an internal temperature of 160°F (70°C).
- While the meatloaf is baking, bring a pot of salted water to a boil and add potatoes. Cook until tender, about 15-20 minutes.
- Drain the potatoes, return them to the pot, and add butter, shredded cheese, milk, and salt. Mash until smooth and creamy.
- Once the meatloaf is cooked, slice it and serve it alongside the cheesy mashed potatoes.
Notes
Let the meatloaf rest for 10 minutes after baking for moist slices. You can customize the meatloaf by adding vegetables or changing the cheese in the mashed potatoes.
