- 2 large sweet potatoes
- 1 lb ground beef (or turkey)
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1/2 cup diced tomatoes
- Avocado or guacamole for topping
- Sour cream for serving (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and poke holes in them with a fork. Place them on a baking sheet and bake for 45-60 minutes or until tender.
- In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat and add the taco seasoning, stirring to combine.
- Stir in the black beans, corn, and diced tomatoes, and let the mixture simmer for about 5 minutes.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Cut the sweet potatoes in half lengthwise and fluff the insides with a fork.
- Fill each sweet potato half with the taco mixture. Top with shredded cheese, then return to the oven for 5-10 minutes to melt the cheese.
- Serve the stuffed sweet potatoes topped with guacamole, sour cream, and fresh cilantro, if desired.
