- 4 Carrots
- 2 tbsp Olive oil
- 1 tbsp Honey
- Salt, to taste
- Pepper, to taste
- Fresh parsley (for garnish)
Instructions
- Boil the carrots: Start by peeling and chopping the carrots into small pieces. Place them in a pot of salted water and bring to a boil. Cook the carrots until they are tender, which usually takes about 15-20 minutes.
- Drain the carrots: Once the carrots are tender, drain them thoroughly in a colander. Make sure to remove any excess water.
- Mash the carrots: Return the drained carrots to the pot. Add a splash of olive oil and a drizzle of honey to the pot. Use a potato masher or a fork to mash the carrots until they reach a creamy consistency.
- Season: Taste the mashed carrots and season with salt and pepper to your liking. Remember that a little pinch of salt can enhance the flavor.
- Garnish and serve: Transfer the smashed carrots to a serving dish. Garnish with fresh parsley for a pop of color and added flavor. Serve warm and enjoy!
