Ingredients

  • 1/4 cup maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup raisins or chocolate chips
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the pumpkin puree, rolled oats, almond flour, and maple syrup in a mixing bowl.
  3. Add the cinnamon, nutmeg, baking powder, and salt, and mix until well combined.
  4. Fold in the raisins or chocolate chips.
  5. Scoop the dough onto a baking sheet lined with parchment paper, flattening each cookie slightly.
  6. Bake for 15-20 minutes or until the edges are set.
