Description

Wholesome and nutritious oatmeal bars made with rolled oats, bananas, and berries, perfect for breakfast or a snack.


Ingredients

  • 2 cups rolled oats
  • 1 cup mashed bananas (or applesauce)
  • 1 cup frozen berries (mixed or your choice)
  • 1/4 cup maple syrup or agave syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup nut butter (like almond or peanut butter)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, mashed bananas, maple syrup, nut butter, cinnamon, and salt.
  3. Stir in the frozen berries until evenly distributed.
  4. Pour the mixture into the prepared baking pan and spread it out evenly.
  5. Bake for about 25-30 minutes, or until the edges are golden brown.
  6. Allow to cool before cutting into bars and enjoy!

Notes

Store in an airtight container at room temperature for up to 5 days, in the fridge for up to 2 weeks, or freeze for up to 3 months.
