Ingredients

- 2 cups rolled oats
- 1 cup apples, chopped
- 1/2 cup almond milk (or any milk of choice)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a cake pan.
- In a large bowl, combine rolled oats, chopped apples, almond milk, honey, vanilla extract, baking powder, cinnamon, and salt. Mix until well combined.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool, then slice and serve.
Notes
Store covered at room temperature for a few days, in the fridge for up to a week, or freeze for 2-3 months.
