- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 medium zucchini, chopped
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes (no added sugar)
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent (about 3-4 minutes).
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the ground beef and cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes).
- Drain any excess fat if necessary.
- Add the chopped zucchini and bell pepper to the skillet and cook for about 5 minutes or until softened.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Let it simmer for 10 minutes, stirring occasionally.
- Remove from heat and garnish with fresh parsley if desired. Serve warm.
