- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- Tzatziki sauce for serving (optional)
Instructions
- In a bowl, combine diced chicken, olive oil, garlic powder, oregano, salt, and pepper. Mix well.
- In a skillet over medium heat, cook the chicken mixture until fully cooked and browned, about 6-8 minutes.
- In serving bowls, layer quinoa or rice, cooked chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Top with fresh parsley and drizzle with tzatziki sauce if desired.
