Ingredients

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • Tzatziki sauce for serving (optional)

Instructions

  1. In a bowl, combine diced chicken, olive oil, garlic powder, oregano, salt, and pepper. Mix well.
  2. In a skillet over medium heat, cook the chicken mixture until fully cooked and browned, about 6-8 minutes.
  3. In serving bowls, layer quinoa or rice, cooked chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  4. Top with fresh parsley and drizzle with tzatziki sauce if desired.
