Description

Ingredients

  • 1 cup low-fat cottage cheese
  • 1 cup rolled oats
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon maple syrup

Instructions

  1. Place cottage cheese, oats, eggs, vanilla extract, baking powder, and cinnamon in a high-speed blender.
  2. Blend on high until the mixture is smooth and the oats are completely processed.
  3. Heat a non-stick skillet over medium-low heat and apply a light coating of cooking spray.
  4. Pour approximately 1/4 cup of batter for each pancake onto the skillet.
  5. Cook until small bubbles appear on the surface and the edges look dry, about 2 to 3 minutes.
  6. Flip the pancakes carefully and cook for an additional 1 to 2 minutes until golden brown.
  7. Remove from heat and serve immediately.

Notes

For extra flavor, add blueberries or chocolate chips to the batter. Store leftovers in an airtight container for up to 3 days or frozen for 2 months.
