- 1 cup low-fat cottage cheese
- 1 cup rolled oats
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1 tablespoon maple syrup
Instructions
- Place cottage cheese, oats, eggs, vanilla extract, baking powder, and cinnamon in a high-speed blender.
- Blend on high until the mixture is smooth and the oats are completely processed.
- Heat a non-stick skillet over medium-low heat and apply a light coating of cooking spray.
- Pour approximately 1/4 cup of batter for each pancake onto the skillet.
- Cook until small bubbles appear on the surface and edges look dry, about 2 to 3 minutes.
- Flip the pancakes carefully and cook for an additional 1 to 2 minutes until golden brown.
- Remove from heat and serve immediately.
Notes
For added sweetness, top with fresh fruits or a drizzle of honey. You can customize by adding mashed banana or blueberries.
