Description

Delicious and nutritious pancakes made with low-fat cottage cheese and rolled oats, perfect for a healthy breakfast or snack.


Ingredients

  • 1 cup low-fat cottage cheese
  • 1 cup rolled oats
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon maple syrup

Instructions

  1. Place cottage cheese, oats, eggs, vanilla extract, baking powder, and cinnamon in a high-speed blender.
  2. Blend on high until the mixture is smooth and the oats are completely processed.
  3. Heat a non-stick skillet over medium-low heat and apply a light coating of cooking spray.
  4. Pour approximately 1/4 cup of batter for each pancake onto the skillet.
  5. Cook until small bubbles appear on the surface and edges look dry, about 2 to 3 minutes.
  6. Flip the pancakes carefully and cook for an additional 1 to 2 minutes until golden brown.
  7. Remove from heat and serve immediately.

Notes

For added sweetness, top with fresh fruits or a drizzle of honey. You can customize by adding mashed banana or blueberries.
