Description

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 bell pepper, diced
  • 1 cup corn
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. Combine quinoa and vegetable broth in a pot, bring to a boil, then reduce heat and simmer for about 15 minutes or until quinoa is cooked.
  3. In a large bowl, combine black beans, bell pepper, corn, and cooked quinoa.
  4. Drizzle with olive oil, add cumin, salt and pepper, and mix well.
  5. Top with diced avocado and fresh cilantro before serving.
