- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 bell pepper, diced
- 1 cup corn
- 1 avocado, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- Combine quinoa and vegetable broth in a pot, bring to a boil, then reduce heat and simmer for about 15 minutes or until quinoa is cooked.
- In a large bowl, combine black beans, bell pepper, corn, and cooked quinoa.
- Drizzle with olive oil, add cumin, salt and pepper, and mix well.
- Top with diced avocado and fresh cilantro before serving.
