- 1 cup cooked chicken, shredded
- 1/2 cup Greek yogurt
- 1/2 cup cottage cheese
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/2 cup grape tomatoes, halved
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Lettuce leaves or whole grain wraps for serving
Instructions
- In a large bowl, take the shredded chicken.
- Add the Greek yogurt and cottage cheese.
- Mix in the diced celery, red onion, and halved grape tomatoes.
- Pour in the lemon juice.
- Stir everything well until all the ingredients are blended.
- Season with salt and pepper to your taste.
- Serve in lettuce leaves or use it as a filling for wraps or sandwiches.
Notes
Store leftovers in an airtight container and use within 3 days for best taste. Can be frozen, but vegetables may lose crunch when thawed.
