- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can enchilada sauce
- 8 corn tortillas
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine shredded chicken, cheese (reserve some for topping), cumin, garlic powder, salt, and pepper in a mixing bowl.
- Spread a thin layer of enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, roll them up, and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with reserved cheese.
- Bake for 20-25 minutes until the cheese is bubbly and slightly golden.
- Garnish with fresh cilantro before serving.
Notes
Serve with Mexican rice, refried beans, guacamole, and a side salad for a complete meal.
