Description

This healthy chicken enchiladas recipe combines great flavor with nutritious ingredients. It’s an easy and satisfying alternative to traditional enchiladas.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can enchilada sauce
  • 8 corn tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine shredded chicken, cheese (reserve some for topping), cumin, garlic powder, salt, and pepper in a mixing bowl.
  3. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll them up, and place seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with reserved cheese.
  6. Bake for 20-25 minutes until the cheese is bubbly and slightly golden.
  7. Garnish with fresh cilantro before serving.
