  • 10 oz yellow squash, sliced

  • Salt and black pepper to taste

Instructions

  1. In a bowl, season the diced chicken breast with salt, pepper, Italian seasoning, and garlic powder. Ensure even coating.
  2. Heat a large skillet over medium-high heat. Add the olive oil and let it heat up.
  3. Add the seasoned chicken pieces to the skillet. Cook for about 5-6 minutes on one side until browned, then flip and cook for another 4-5 minutes until cooked through.
  4. Once the chicken is cooked, add the sliced zucchini and yellow squash to the skillet and stir to combine with the chicken.
  5. Sprinkle in the remaining Italian seasoning, garlic powder, salt, and pepper, mixing well to coat the vegetables.
  6. Cook everything together for an additional 3-4 minutes, until the vegetables are tender yet still crisp.
  7. Stir in the lemon juice and zest for a fresh flavor.
