- 4 cups vegetable broth
- 1 cup milk (or milk substitute)

- Optional: crushed red pepper for a kick
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the broccoli florets and vegetable broth, bringing the mixture to a boil.
- Reduce heat and let it simmer for about 15-20 minutes, until the broccoli is tender.
- Use an immersion blender to puree the soup until smooth or leave it chunky, as desired.
- Stir in the milk and cheese, cooking until the cheese is melted and the soup is creamy.
- Season with salt, pepper, and crushed red pepper if desired.
- Serve warm.
