- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 bell pepper, diced
- 1 onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Juice of 1 lime
- 2 tablespoons honey
- 1/4 cup fresh cilantro, chopped
- Corn or flour tortillas
Instructions
- Preheat the oven to 400°F (200°C).
- Combine sweet potatoes, bell pepper, onion, olive oil, chili powder, cumin, salt, and pepper in a large bowl. Toss to coat.
- Spread the mixture on a baking sheet and roast for about 25-30 minutes until tender.
- Mix lime juice, honey, and cilantro in a small bowl.
- Place the roasted sweet potato and vegetable mixture in a taco shell, then drizzle the honey-lime cilantro mixture on top.
- Serve warm and enjoy your tacos!
