Savory turkey meatballs blended with the sweetness of apples, perfect for a healthy meal.


Ingredients

  • 1 pound ground turkey
  • 1 cup finely chopped onion
  • 1/2 cup unsweetened applesauce
  • 1/2 cup breadcrumbs (whole wheat or gluten-free)
  • 1/4 cup apple cider
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground turkey, chopped onion, unsweetened applesauce, breadcrumbs, apple cider, fresh parsley, Dijon mustard, garlic powder, onion powder, dried thyme, salt, and black pepper.
  3. Using your hands or a spatula, mix all the ingredients until well combined. Be careful not to overmix.
  4. Form small meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
  5. Lightly spray the top of the meatballs with olive oil spray.
  6. Bake for 20-25 minutes or until they are cooked through and have an internal temperature of 165°F (74°C).
  7. Remove from the oven and let them rest for a few minutes before serving.
