- 1 pound ground turkey
- 1 cup finely chopped onion
- 1/2 cup unsweetened applesauce
- 1/2 cup breadcrumbs (whole wheat or gluten-free)
- 1/4 cup apple cider
- 1/4 cup fresh parsley, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil spray
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground turkey, chopped onion, unsweetened applesauce, breadcrumbs, apple cider, fresh parsley, Dijon mustard, garlic powder, onion powder, dried thyme, salt, and black pepper.
- Using your hands or a spatula, mix all the ingredients until well combined. Be careful not to overmix.
- Form small meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
- Lightly spray the top of the meatballs with olive oil spray.
- Bake for 20-25 minutes or until they are cooked through and have an internal temperature of 165°F (74°C).
- Remove from the oven and let them rest for a few minutes before serving.
