- 1 cup black beans, rinsed and drained
- 2 large eggs
- 1/2 cup cocoa powder
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a food processor, combine black beans, eggs, cocoa powder, honey (or maple syrup), melted coconut oil, vanilla extract, baking powder, and salt. Blend until smooth.
- Stir in chocolate chips if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let cool before cutting into squares and enjoy!
Notes
For added texture, consider mixing in chopped nuts or using peppermint extract for a minty flavor.
