Ingredients

Scale
  • 2 pounds chicken thighs
  • 1 cup pineapple chunks
  • 2 bell peppers, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix soy sauce, olive oil, minced garlic, grated ginger, salt, and pepper to create a marinade.
  3. Marinate the chicken thighs in the sauce for at least 15 minutes.
  4. Arrange the marinated chicken thighs, pineapple chunks, and sliced bell peppers on a sheet pan.
  5. Drizzle any remaining marinade over the top.
  6. Roast in the oven for 25-30 minutes, or until the chicken is cooked through and vegetables are tender.
  7. Serve warm and enjoy your tropical meal!

Notes

Don’t skip the marinade for enhanced flavor. Cut vegetables evenly for proper cooking, and avoid overcrowding the pan.
