- 2 pounds chicken thighs
- 1 cup pineapple chunks
- 2 bell peppers, sliced
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Mix soy sauce, olive oil, minced garlic, grated ginger, salt, and pepper to create a marinade.
- Marinate the chicken thighs in the sauce for at least 15 minutes.
- Arrange the marinated chicken thighs, pineapple chunks, and sliced bell peppers on a sheet pan.
- Drizzle any remaining marinade over the top.
- Roast in the oven for 25-30 minutes, or until the chicken is cooked through and vegetables are tender.
