Ingredients

  • 4 Chicken thighs
  • 1 cup Pineapple chunks
  • 2 Bell peppers, sliced
  • 1/4 cup Soy sauce
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix soy sauce, minced garlic, grated ginger, olive oil, salt, and pepper to create the marinade.
  3. Marinate the chicken thighs in the mixture for at least 15 minutes.
  4. Arrange the marinated chicken, pineapple chunks, and sliced bell peppers on a sheet pan.
  5. Roast in the preheated oven for about 30 minutes, or until the chicken is cooked through and vegetables are tender.
