- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract

- 3 large eggs
- 1/2 cup heavy cream
- 1/4 cup butterscotch sauce
- Whipped cream for topping
- Caramel sauce for drizzling
Instructions
- Preheat the oven to 325°F (163°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese until smooth. Add brown sugar, vanilla extract, and butter extract, mixing until combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the heavy cream and butterscotch sauce until smooth.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven for 60-70 minutes until the edges are set and the center slightly jiggles.
- Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
- Transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight.
- Before serving, top with whipped cream and drizzle with caramel sauce.
Notes
Cool the cheesecake slowly in the oven to prevent cracking. Ensure ingredients are at room temperature for the best texture.
