- 1 cup chopped onion
- 1 cup bell pepper, diced
- 2 cups frozen mixed vegetables (like peas and corn)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 3 cups cooked egg noodles (or pasta of your choice)
- Salt and pepper to taste
- Optional: breadcrumbs for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spatula.
- Add the chopped onion and bell pepper to the skillet and cook until they’re soft, about 5 minutes.
- Stir in the frozen vegetables, cream of mushroom soup, sour cream, and season with salt and pepper. Mix well until everything is evenly combined.
- Fold in the cooked egg noodles (or your choice of pasta) into the mixture until well-coated.
- Pour the entire mixture into a greased casserole dish, then sprinkle the shredded cheese on top. If you like a crispy topping, add a layer of breadcrumbs.
- Place the casserole in the oven and bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
