Description
This Haitian Legume recipe is a traditional Haitian vegetable stew made with eggplant, cabbage, carrots, and your choice of meat or seafood.
Ingredients
1 large eggplant, peeled and chopped
1/2 head cabbage, chopped
3 carrots, sliced
1/2 lb green beans, trimmed
2 cloves garlic, minced
2 tbsp tomato paste
1 lb beef or pork, cubed (optional: crab or shrimp)
2 tbsp olive oil
2 cups water or broth
Salt and pepper, to taste
1 tsp thyme
1 Scotch bonnet pepper (optional)
Instructions
1. In a large pot, heat oil over medium heat and brown meat on all sides.
2. Add garlic and cook for 1 minute.
3. Stir in tomato paste, thyme, salt, and pepper; cook for 2 minutes.
4. Add eggplant, cabbage, carrots, green beans, and water or broth.
5. Cover and simmer for 30–40 minutes, stirring occasionally, until vegetables are tender.
6. Add Scotch bonnet if desired and cook for 5 more minutes.
7. Serve hot with rice or plantains.
Notes
For a vegetarian version, omit the meat and add more beans or root vegetables.
Store leftovers in the fridge for up to 4 days or freeze for 2 months.
