Description

Delicious and healthy protein bars that are easy to make and require no baking.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup protein powder (your choice of flavor)
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup mix-ins (chocolate chips, nuts, dried fruits, etc.)

Instructions

  1. Prepare the baking dish by lining an 8×8 inch baking dish with parchment paper.
  2. Mix dry ingredients in a large bowl: combine rolled oats and protein powder.
  3. Combine wet ingredients in another bowl: mix almond butter, honey (or maple syrup), almond milk, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and mix well. Add more almond milk if needed.
  5. Fold in your choice of mix-ins until evenly distributed.
  6. Transfer the mixture to the prepared baking dish and press down firmly.
  7. Chill in the refrigerator for at least 60 minutes.
  8. Cut into bars after setting and serve or store in an airtight container.

Notes

These bars can last up to one week at room temperature. For longer storage, freeze them in a freezer-safe container.
