Description

A healthy, quick, and delicious skillet meal made with ground turkey and zucchini, packed with protein and nutrients.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 garlic cloves
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Chop the onion and sauté it until soft and translucent (3-4 minutes).
  3. Add minced garlic and cook for another 30 seconds.
  4. Crumble and cook the ground turkey until fully browned (6-8 minutes).
  5. Wash, trim, and slice zucchinis, then add to the skillet.
  6. Cook zucchini for an additional 4-5 minutes until slightly softened.
  7. Sprinkle oregano, salt, black pepper, and crushed red pepper.
  8. Pour chicken broth into the skillet and stir to combine.
  9. Simmer on low for 3-4 minutes, allowing flavors to meld.
  10. Stir in grated Parmesan cheese until melted and evenly distributed.
  11. Taste and adjust seasoning if needed, then serve immediately.
