Ingredients

- 1 pound ground turkey
- 2 medium zucchinis
- 1 tablespoon olive oil
- 1/2 medium onion
- 2 garlic cloves
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Chop the onion and sauté it until soft and translucent (3-4 minutes).
- Add minced garlic and cook for another 30 seconds.
- Crumble and cook the ground turkey until fully browned (6-8 minutes).
- Wash, trim, and slice zucchinis, then add to the skillet.
- Cook zucchini for an additional 4-5 minutes until slightly softened.
- Sprinkle oregano, salt, black pepper, and crushed red pepper.
- Pour chicken broth into the skillet and stir to combine.
- Simmer on low for 3-4 minutes, allowing flavors to meld.
- Stir in grated Parmesan cheese until melted and evenly distributed.
- Taste and adjust seasoning if needed, then serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2-3 months.
