- 2 medium zucchinis, chopped

Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion and bell pepper; sauté until softened.
- Add the minced garlic and cook for another minute.
- Add the ground turkey to the skillet and cook until browned.
- Stir in the chopped zucchini, diced tomatoes, Italian seasoning, salt, and pepper.
- Cook until the zucchini is tender, about 5-7 minutes.
- Garnish with fresh herbs if desired. Serve warm.
