Description

Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté chopped onion until soft (3-4 minutes).
  3. Add minced garlic and cook until fragrant (30 seconds).
  4. Crumble in the ground turkey and cook until browned (6-8 minutes).
  5. Prepare zucchini by slicing into half-moons and add to the skillet.
  6. Stir together and cook until zucchini starts to soften (4-5 minutes).
  7. Season with oregano, salt, black pepper, and crushed red pepper flakes; pour in chicken broth.
  8. Simmer on low for 3-4 minutes.
  9. Sprinkle grated Parmesan over the top, stir until melted.
  10. Taste for seasoning adjustments and serve immediately.

Notes

To store, cool to room temperature and refrigerate in an airtight container for up to 3 days. For longer storage, freeze for up to 3 months.
