Description

A quick and healthy dish featuring tender ground turkey cooked with fresh vegetables and a flavorful teriyaki sauce.


Ingredients

  • ½ cup coconut aminos (or low sodium soy sauce)
  • ¼ cup water
  • 2 tablespoons coconut sugar
  • 1 teaspoon rice vinegar
  • ½ teaspoon ground ginger
  • 3 garlic cloves, minced
  • 1 tablespoon cornstarch or arrowroot + 2 tablespoons water
  • 1 tablespoon avocado oil
  • ½ cup diced onion
  • 1 pound ground turkey
  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • Pinch of salt, for cooking
  • 1 green onion, sliced (optional for garnish)

Instructions

  1. In a small saucepan over medium heat, whisk together the coconut aminos, water, coconut sugar, rice vinegar, ground ginger, and minced garlic. Heat the mixture until the sauce begins to simmer.
  2. In a small bowl, mix the cornstarch with two tablespoons of water until the cornstarch is fully dissolved. Slowly add this mixture to the saucepan and let it simmer, stirring constantly, until the sauce thickens, about 1-2 minutes. Remove from heat and set aside.
  3. Heat the avocado oil in a large skillet over medium heat. Add the diced onions and cook for about 3-4 minutes until softened.
  4. Add the ground turkey to the skillet. Use a spatula to break the turkey into smaller pieces and cook for about 4-5 minutes until partially browned.
  5. Toss in the broccoli florets and shredded carrots. Stir to combine, and cook until the vegetables are tender and the turkey is completely cooked through, about 5-6 minutes.
  6. Pour the prepared sauce over the turkey and vegetable mixture, stirring to ensure everything is evenly coated. Let it simmer gently for 2-3 minutes.
  7. If desired, garnish with sliced green onions. Serve warm over vegetables, in lettuce wraps, or with rice.
