Instructions
- Start by peeling and dicing the sweet potatoes into small cubes.
- Heat a skillet over medium heat and add olive oil.

- Next, add the diced sweet potatoes to the skillet, cover, and cook for about 10-15 minutes until tender.
- While the sweet potatoes are cooking, slice the zucchini into half-moons. Add the zucchini to the skillet in the last 5 minutes of cooking.
- Once everything is cooked and tender, stir to combine.
- Serve the mixture in bowls, adding any optional toppings as desired.
